rehab program

As a part of the Inspirations for Youth and Families Nutritional and Life Skills course the teens in our rehab program are taught how to create healthy and fulfilling meals. They have learned how to make smoothies, cookies and now soup!

These recipes are taught as hands on approach to nutrition and allow the teens in our rehab program to learn independence. Our drug rehab program clients are safely taught how to prep, cook and serve these delicious meals which they often can’t wait to go home and replicate for family and friends.

Together our teens worked in teams to create bean and puree cauliflower soup for fellow clients and Inspirations staff. They were also taught the nutritional benefits of each soup and why they should eat healthy. 

Try these awesome recipes yourself:

Puree Cauliflower Soup Recipe:

Serves 6

2 heads of cauliflower
3 cloves of chopped garlic
2 shallots chopped
1 tablespoon olive oil
3 cups of chicken broth
1 cup water
1 bay leaf
1 teaspoon dried thyme
2 cups heavy cream
Salt and pepper to taste

Toss cauliflower pieces, olive oil, garlic, and shallots in a large bowl. Spread them in a roasting pan or baking sheet. Roast until tender (approx. 30 mins)
Transfer cauliflower to a soup pot and pour chicken broth and water. Season soup with thyme and bay leaf. Cook over a medium heat for 30 min then remove bay leaf. Pour soup to a blender and puree. Stir cream(soup) in a new pot with salt and pepper. Make sure to heat before serving.

Bean Soup Recipe:

Serves 6

1 large onion – chopped
2 carrots sliced in rounds
1 bag shredded Cabbage
4 Cans pink beans
2 empty bean can water
1/2 cup olive oil
1 Tblsp cilantro
1/4 teaspoon Cumin
grated cheese
salt and pepper to taste.

Saute onions and carrots, until onions are clear, add cabbage Beans and water, Simmer for 30 min.
Garnish with cilantro and grated cheese of choice.
