Inspirations teen rehab creates ice cream

Shawn is lactose intolerant and created his own ice cream from coconut milk instead!

To beat the summer heat, Inspirations teen rehab’s IOP program had its teen clients learn how to make ice cream! This lesson was taken straight from our Nutritional Course. Our nutritional and life skills course was developed to help our teens understand the importance of eating healthy. Looking at healthy recipes is all fun and games. However, Inspirations teen rehab takes things to the next level. By teaching our teens how to prepare healthy and nutritious meals.

How easy is it to make?

The recipe is an easy way to create tasty and healthy ice cream that anyone can do at home. One of our teens, Shawn has a special no dairy diet. His diet provided a hands on and fun way to teach the teens a simple alternative way to make ice-cream at home! Check out Shawn’s coconut milk ice cream above.

What you will need:

1 cup cream

6 tsp vanilla essence

2 trays of ice cubes

6 tbsp rock salt

1 medium Ziploc bag

1 large Ziploc bag

Tea towel or oven mitts

Tip: If you are lactose intolerant like Shawn (above) or have an alternate lifestyle you can substitute cream with other choices such as coconut or almond milk.


  1. Pour the cream, sugar, and vanilla into the medium-sized Ziploc bag and combine the ingredients. Be sure to zip up the bag securely first.
  2. Put the ice into the larger Ziploc bag
  3. Spoon salt over the top of the ice in the larger Ziploc bag
  4. Place medium bag containing cream mixture into the large Ziploc bag with ice
  5. Zip shut and shake for 10-15 minutes or until mixture becomes the same consistency as ice cream
  6. Once ready remove back of cream and wipe or wash way salt on the outside of the bag
  7. You now have homemade ice cream! Either eat it straight from the bag or cut one end and squeeze into bowl or cone.

Tip: Use your mitts or oven mitts to hold the bags as you shake, it gets cold!
